Beefeater Global Bartender Competition and World Class 2015 finalist. He currently works as Head Bartender at the legendary Boadas cocktail bar in Barcelona.

Profile

Born in Valencia (due to a geographical accident) in 1981, when he attempted a coup d’état! , and he was already fighting… I’m a true Tenerife native and lover of the Canary Islands, I studied hotel management and was lucky enough to be able to travel and work around the world, learning and observing (as Cervantes said), living and dreaming. I write poetry, and I would say that I am a poet, first and foremost, and a bartender in first “B” (because I couldn’t say second…) I dedicate my whole life to my bar and my creations – it’s my way of expressing myself – it’s more a necessity than a profession… I need to “create”, “interact”, and in fact, it’s the only time I can deal with other human beings….

For more than 7 years now I have had the good fortune and the immense honour of working at Boadas Cocktails, “The Cathedral of Cocktails” for no less than the last 88 years. I have learned a lot in these almost 20 years of working behind the bar, but without a doubt my greatest achievement is to be part of the history of this immense and wonderful bar that is Boadas, and thus the history of the world cocktail bar.

Current projects

“Timeless Negroni”: We have created 3 different Timeless Negronis, aged for 3 months in white oak barrels. A classic,with equal parts. A more bitter one, Boadas “style”, playing with amaros and vermouths. And a seasonal one that changes and within which we always play around with some Teichenné liqueur, right now we are using the spring one (Teichenné Elderflower liqueur), and the summer one is ageing.

We will soon present a collection with 10 slightly reworked “Dry Martinis”. Ten Timeless Martinis, diluted with Icelandic Water, and based with Sipsmith Gin.

Our intention is to replicate the 10 “Martinis” that have been the most popular over the last 7 years. With light touches of chilli, rosemary, calvados, pepper, oregano, camomile, or something as crazy as peanuts, we will soon be able to enjoy them.

We are also preparing the presentation of a menu of 15 “Daiquiris” with recipes from the best bartenders in the world who have had the wonderful courtesy to lend their art for the greater glory of Boadas, you will find recipes from: Jared Brown, Simone Caporale, Erik Lorincz, Alex Kratena, Antonio Naranjo, Julio Cabrera, Marcio Silva, Salvatore Calabrese, Luca Cinalli, Nando Córdova, Ago Perrone, Marc Álvarez, Jerónimo Vaquero, myself, and the most important; an unpublished one from Maria Dolores Boadas.

And we have something else, like a whisky that we are preparing or a project to open on Sundays and another for live Cuban music with violins, but we will tell you about it later or I won’t have more to tell you, heh heh.

Teichenné Family

I am lucky enough to be part of the family, and to be able to enjoy all the Teichenné products for my creations, especially recently, whenthe pandemic has given us more time to think, play, test and grow.

Vision for the future

Well, I don’t really know, after this “apocalypse”, but I think people need to get together again, just to chat with a good drink. As far as industry is concerned, I am betting on an increase in demand for classics.I know that everyone is betting on LOW ABV cocktails, low alcoholic drinks, but I believe, at least from the point of view i have, that this is only a theory, just like so many other “supposed future trends”. The demand for classic, exquisitely served drinks will increase.

Oof! I don’t know, I love Teichenné’s elderflower ginger liqueur. I’ve rediscovered thegreen apple (which is in the Spring Negroni, too…) and Butterscotch which was in the Winter Negroni. i love them all!
